Brett is the Chef Patron of Tierra and Mar, a restaurant in Cirencester offering a high end tapas dining experience using local produce.
Prior to opening his own restaurant with his wife Silvia, Brett has worked in various Michelin starred and AA rosette restaurants in Australia, Spain and England. These restaurants include Restaurante Riff Valencia, Monastell Alicante Es Raco des Taix Mallorca, lords of the manor Upper Slaughter, L’ortolan Reading, Aubergine at the compleat angler Marlow and Arras restaurant in Australia amongst others.
Brett grew up in Wiltshire and is the ‘Tierra’ part of the restaurant where Silvia who grew up in Benidorm is the ‘Mar’. The meaning behind the name is ‘land and sea’.
